The Sous Chef is responsible for enhancing the overall Resident experience by assisting the Executive Chef through the provision of exceptional oversight and culinary training/mentorship to kitchen employees.  This is to be handled in The Sterling Touch professional, friendly, courteous, helpful and timely manner, resulting in a very high level of satisfaction for Residents and their guests.  Position is under the general guidance of the Executive Chef in accordance with Community standards, processes, procedures and practices.

 

Essential Functions: 

  • Participate in Start Sterling! line up each day.
  • Greet the Residents, guests, fellow employees and vendors in a friendly and courteous manner.
  • Assist Executive Chef with supervising and coordinating culinary activities for all dining venues - Bistro, Casual, Formal and Club Room as well as special events and private functions.
  • Uphold and education kitchen staff on established techniques of food presentation and food quality standards.
  • Provide leadership, coaching and mentorship to all kitchen staff.
  • Ensure standardized production from kitchen staff for all recipes to ensure quality offerings to the Residents at all times.
  • Develop and select recipes including offerings for various health related issues.
  • Ensure all kitchen equipment is cleaned and maintained in good working order at all times.
  • Ensure kitchen is always safe and sanitary and in compliance with local and state regulatory requirements.
  • Provide general/routine cleaning tasks using standard cleaning products for compliance with any health, safety or regulatory standards.

 

Education:

  • College or Culinary school degree highly preferred.
  • Combination of education and experience equivalent to graduation from Culinary school or any other combination of education, training or experience that provides the required knowledge, skills and abilities

 

Experience:

  • Three or more years of experience in Food and Beverage, County Club, Fine Dining, Restaurant, or Senior Living
  • Cooking experience required along with saut and broiler experience
  • Excellent working knowledge of the fundamentals of cooking and dietary understanding.
  • Excellent working knowledge of accepted standards of sanitation.
  • Knowledge of operating all kitchen equipment, i.e., stoves, ovens, broilers, slicers, steamers, kettles, dish machine, etc.
  • Mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes.
  • Ability to read, write and understand the English language in order to direct, manage, hire and train kitchen staff, complete requisitions, read recipes and communicate with other employees as well as Residents and their guests.  
  • Sufficient manual dexterity of hands and arms in order to use all kitchen equipment and utensils (e.g. knives, spoons spatulas, tongs, slicers, etc.)
  • Ability to grasp, lift and/or carry, or otherwise, move or push a hand cart/truck with goods weighing a maximum of 50 lbs.

 

 Licenses or Certificates:

  • Ability to obtain any government (Federal or State) required license or certificate for Assisted Living. Serve safe certified required.
